4, 2, 1…Delicious persimmon smoothie!

4 Ingredients, 2 minutes and 1 delicious persimmon smoothie!

Sometimes I get inspired when I’m in the train and I imagine in my head a delicious mix of ingredients and spices that would turn into a super sexy, irresistible dish…Other times I get suddenly inspired (I open the fridge and voilá!, I just make something really delicious!) and sometimes I also get inspired by YOU my readers, and I absolutely love it!…because my goal is not only inspire you to cook with healthy, natural, plant-based ingredients, but also to create a community in which we can all learn together and inspire EACH OTHER… :D The fact that I’m a chef or a cooking teacher doesn’t mean that I don’t learn from YOU, in fact…you are my best teacher from whom I learn everyday…. I LOVE THAT!

I got this idea from a picture I saw in the Beautiful Yoguis Facebook Group (if you are not there and are interested in yoga you should definitely check it out!, another awesome community where we inspire each other everyday to not only become a better person through the art of yoga but also to eat healthy, plant based foods). Anyways, I saw the picture and since persimmon is by no means my favorite fruit in the world I didn’t take a long time to rush to the fruit shop and make this delicious smoothie!

So, don’t wait any longer friends, persimmon season is officially HERE and NOW! and you know what? It doesn’t last long…so get all the 4 ingredients and enjoy this great snack TODAY!!!

Ingredients (1 smoothie)

• 250 ml rice-hazelnut milk (you can also use any plant-based milk like rice, oat or almond milk)

• 2 ripe persimmons

• 1 or 2 medjool dates, depending on how sweet you want it

• 1 1/2 tbsp carob powder

Directions

1.Peal the persimmons very carefully to avoid breaking apart. Place them in the blender. 

2.Chop dates with a knife and add them to the blender together with carob powder and plant-based drink of choice. 

3.Blend for about 1 minute until all the ingredients are well mixed. 

4.You can put some white tahini or almond butter on top as a decoration (and as a delicious extra!)
